This was advertised as a healthy bread, and indeed there is no processed sugar or unhealthy fats. Made with fresh fruit, honey, and yogurt, there is little to fear in this bread. It is quick and easy to make, too — an added bonus.


3 ripe bananas
2 large eggs
½ cup (4¼ oz./120g) 2% plain Greek yogurt
¼ cup (60ml/3 oz./85g) honey
1 teaspoon vanilla extract
1 teaspoon baking soda
1½ cups (7½ oz./213g) all-purpose flour
1 cup (6 oz./170g) fresh blueberries


Heat the oven to 350°F/180°C.

Place peeled bananas in a large bowl and mash. Add the eggs, yogurt, honey, vanilla extract, and baking soda. Mix to combine thoroughly.

Add flour and mix well.

Add blueberries and gently fold into batter.

Pour the batter into a greased 9x5-inch (23x13cm) bread pan. Bake 50 to 70 minutes, or until a toothpick comes out clean when inserted in the middle of the loaf (or to an internal temperature around 200°F/93°C). (Baking times might vary, so keep an eye on the bread.)

Allow to cool before slicing.
